2022 San Francisco World Spirits Double Gold Medal Winner
Brilliant amber in color, the nose unveils layers of complexity. Leading with young leather, caramel and spices, the complex aroma profile shows hints at white flowers and lemongrass. On the palate, this special expression showcases an explosion of floral notes followed by toasted nuts and mellow smoky undertones. This unique Tobalá Penca expression leaves a wonderful lingering, full mouth-feel.
Roasted for 5-8 days in underground pits before a ten-day to two week fermentation. Double distilled before 1-3 month aging in glass vessels with agave penca leaf.
Mezcal Joven or “young” is bottled within two months of distillation without barrel aging and will appear clear, like a Vodka or Gin. Longer barrel aging, with the principal aim to soften and round a spirit’s flavor profile, is often most prized by connoisseurs. However, many die-hard Mezcal enthusiasts insist that oak takes away from the purity of the agave flavors—ranging from earthy and smoky to sweet and floral, often in the same Mezcal—and that Mezcal Joven is the best expression.
