The earthy, rustic flavor profile of this mezcal speaks of the tepextate's long life. Much like a chicken, the older they get the less tender and supple they are. But they begin to take on deeper and more intense flavors. Aromatically it is fresh and herbal and speaks of the earth with notes of mastic, frankincense and apple peel which are mirrored exactly on the palate. There is very little fruit in this mezcal but that won't be a problem for those of us who like to get their taste buds dirty.

Fidencio Jimenez started making mezcal over 120 years ago. Now, his great-grandson, Enrique Jimenez continues the art and tradition.
Launched in 2009, Maestro Mezcalero Enrique Jimenez and partner Arik Torren set out to share traditioal mezcals made through the hands, heart and mind of Enrique. Enrique is a fourth generation mezcalero and farmer, his touch is on every drop. Fidencio is named for Enrique's great grandfather Fidencio Jimenez , the first Mezcalero in the family and where it all began. The majority of Fidencio is made from Agave Espadin which is sourced exclusively from our estate. Fidencio havests only mature agave, know as Capon, for the most sugars and best flavors. They have other agave planted on the estate and are waiting patiently for them to mater. Fidencio does work with small amounts of foraged agave for their silvestre mezcals.
Mezcal Joven or “young” is bottled within two months of distillation without barrel aging and will appear clear, like a Vodka or Gin. Longer barrel aging, with the principal aim to soften and round a spirit’s flavor profile, is often most prized by connoisseurs. However, many die-hard Mezcal enthusiasts insist that oak takes away from the purity of the agave flavors—ranging from earthy and smoky to sweet and floral, often in the same Mezcal—and that Mezcal Joven is the best expression.
