Winemaker Notes

Typically the Cabernet is in the red fruit or dark fruit camp. However, this vintage has complexities of both types of aromas. Blackberry, plum and sweet maraschino cherry dominate the nose with hints of caramel. The wine is smooth at first, but then hits your cheeks with a mild acidity that makes your mouth water before you finish taking a sip. Lively and playful with flavors of dark fruit and just enough structure to let it age gracefully, while also enjoyable when young.

Lots of ripe-fruit aromas of crushed currants and raspberries with some sandalwood and violets. Medium to full body with round, juicy tannins and a flavorful finish. Very fruity cab, but not overdone. Drink or hold.

Deep garnet-purple in color, the 2017 Cabernet Sauvignon offers up vibrant scents of crushed blackcurrants, black raspberries and redcurrant jelly with hints of pencil shavings, red roses and menthol plus a waft of dark chocolate. Medium to full-bodied, the palate has a great intensity of crunchy black fruits with lots of red berry accents and a fine-grained texture, finishing with great length and freshness.

Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
