Winemaker Notes

Assyrtiko is known for its relatively high natural acidity. This wine is true to character, with flavors of citrus, lemongrass and stone fruit. It is medium-bodied and elegant with great finesse.

Pair this Assyrtiko with fatty fish, oysters, poultry, pork and smoked cheeses.

This is one of the best bottles to emerge from the exciting Santorini wine scene and is representative of today's stylistic approach to Assyrtiko. The 2022 Santorini Assyrtiko is softly creamy and rich with orchard fruit, pastry cream and Golden Delicious apple. The wine's rich texture acts as a sounding board to those pretty fruit flavors, and you definitely get the salty mineral tones that are typical of the island.

A high energy wine with brilliant mineral layers, racy lemony acid, texture and long finish. Sourced from 70-year-old vines from Santorini's largest vineyard owner. Vinified in stainless steel with 4 months on lees and regular battonage.

A crisp white variety full of zippy acidity, Assyrtiko comes from the volcanic Greek island of Santorini but is grown increasingly wide throughout the country today. Assyrtiko’s popularity isn’t hard to explain: it retains its acid and mineral profile in a hot climate, stands alone or blends well with other grapes and can also withstand some age. Somm Secret—On the fairly barren, windswept Mediterranean island of Santorini, Assyrtiko vines must be cultivated in low baskets, pinned to the ground. The shape serves to preserve moisture and protect the growing grapes in its interior.

The remains of an ancient volcano that erupted around 1600 BC, Santorini is one of the southern Cyclades islands and is most recognized for its white wines made from the fruity and mineral-rich, Assyrtiko.
