Distiller Notes
Dry Fly Triticale Whiskey is made from one specific seed variety of triticale, grown on the same 117 year-old homesteaded family farm as our wheat. Triticale is a hybrid of wheat and rye, developed in Scotland in the 1800’s. It is the world’s only straight triticale whiskey that drinks a little like a rye with peppery overtones, but finishes like a soft wheat whiskey.

This hybrid of wheat and rye aged four years shows a surge of white pepper and stone fruit on the nose with echoing aromatics of caramel-coated ripe red apple and peanut. Unctuous and generous, this 90-proof spirit coats the palate with wheat bread, coffee-cedar, and bright tones of tangerine and new leather. With a textural dreaminess on the finish, it lengthens with a lean note of minerality that’s similar to the sensation of sipping black tea.
What Whiskey will not cure, there is no cure for.
Coming in a multitude of styles depending on its origin, Whisk(e)y’s flavors range across the board from the sweet, caramel and vanilla-dominated American Bourbons to the briny, peat-heavy Islay Single Malts from Scotland. Though production methods differ widely, all Whiskeys are made by distilling beer made from some type of grain, such as barley, corn, wheat or rye. After the distillation process is complete, the new, clear spirit is transferred to wooden casks where it matures, a process that can take up to thirty years or more.
