Distiller Notes
Categorized as a London dry gin but the unique character and flavor come from our painstaking and original choice of botanicals Amongst other botanicals, the gin includes rowan berry from the mountain ash trees, bog myrtle, hawthorn and heather for a taste of the Kerry landscape Chill filtered before being cut and bottled.
Best served with large cubes of ice, a wedge of fresh orange and a sprinkling of juniper berries. The spirit is collected at 70% abv and then cut to 42.5% abv using the purest of water which we draw from our own well, 240 feet below the distillery.
Produced only in accordance with strict purity standards formulated by an 18th century European Parliament that guaranteed the absence of toxic distillation byproducts, the phrase “London Dry” on a bottle doesn't refer to any specific place of origin, age or ingredients. To be called a London Dry Gin, the base spirit must be distilled in a column still to at minimum, 70% abv. Natural botanicals can be added to the resulting neutral spirit only through re-distillation. Anything added after distillation other than water and a tiny amount of sugar disqualifies a Gin from the title, London Dry.
