Distiller Notes
From the one and only Demerara Distillers Limited comes an aged overproof rum to round out your tropical mixing needs. Diamond Reserve Aged 151 is distilled on a combination of DDL’s heritage stills (wooden column, French Savalle, and double wooden pot still) and aged for 1–2 years in ex-bourbon casks. The time spent in wood rounds the edges of this complex, overproof rum, allowing it to showcase aromas of dried fruits (apples, apricots, dates), leather with peaty undertones, and a hint of butterscotch, with a palate of dark baking spice, cocoa, and vanilla. Make no mistake—not all overproof rums on the market are made to this caliber.
Proof: 151
Often referred to as a Gold Rum, an Aged Rum is one that has been aged in barrels, often Ex-Bourbon or White Oak before bottling. As the Rum continues to age, it draws more and more color and flavor from the wood, adding both body and complexity to the finished product. Aged Rums can be sipped neat or added to cocktails. They fall somewhere in between White and Dark Rums in terms of their respective strength of flavor.
