Dad's Hat classic rye recipe features only rye grain and malt to deliver a pure expression of Pennsylvania Rye Whiskey. Barrel aging for least six months in charred, new oak quarter casks allows the genuine rye flavor to evolve quickly. As a result, the small batch whiskey is ensured of reaching the right balance of complexity and smoothness. The final product is a very smooth spirit that delivers the up-front spice that rye is known for while finishing with a full, round mouthfeel.

    Dad’s Hat rye has evolved, like many craft whiskeys, but they’re still bottling at 6 to 9 months (another label is planned for a straight version). That’s working well. The nose is rip-roaring rye: crushed grain, grass, sweet spice, bitter herbal notes, with all the complexity of the grain. Delivers honestly on the tongue, too, plus a light barrel character, proceeding to an integrated finish. Excellent young rye, there’s no mistaking the mother grain.

Known for its peppery, spicy bite, Rye serves as the ideal base for cocktails like the Sazerac, Manhattan or Old Fashioned. In order for a spirit to be labeled an American Rye Whiskey, the mash bill must be comprised of at least 51% rye grain. The remainder of the mash is most often a combination of malted barley, wheat or corn. After distillation is complete, the spirit is transferred to unused, charred white oak barrels for a minimum of two years, though many producers choose to age longer.
