    Winemaker Notes

Deep, dark, and bright red with aromas of blackcurrants, wild berries, plums, and spices with a nice touch of vanilla, mocha, and oak that lend complexity. Fresh and captivating on the palate with velvety soft tannins that complement the tremendously fruity expression well into the long and lingering finish.

Pairs well with red and white meats in classic, elegant preparations; pastas or legumes over intensely flavored sauces with beef, tomato, mushrooms, or bacon; mild terrines or pâtés, soft ripe and smoked cheeses.

Blend: 85% Merlot, 10.5% Cabernet Sauvignon, 4.5% Syrah

With an outstanding reputation for its bold reds, especially Cabernet Sauvignon, Syrah and Carmenere, the Cachapoal Valley spreads through the northern part of Chile’s Rapel Valley, with a continuous backdrop of the majestic Andes to its east. This region reaches as far north as the southern outskirts of the city of Santiago where it meets the famous region of the Maipo. The Cachapoal Valley produces no shortage of plum and berry dominated full-bodied reds with aromas and flavors reminiscent of mint, cocoa, spice or smoked meat.

With generous fruit and supple tannins, Merlot is made in a range of styles from everyday-drinking to world-renowned and age-worthy. Merlot is the dominant variety in the wines from Bordeaux’s Right Bank regions of St. Emilion and Pomerol, where it is often blended with Cabernet Franc to spectacular result. Merlot also frequently shines on its own, particularly in California’s Napa Valley. Somm Secret—As much as Miles derided the variety in the 2004 film, Sideways, his prized 1961 Château Cheval Blanc is actually a blend of Merlot and Cabernet Franc.
