Winemaker Notes

This is Clarendon Hills' flagship wine. It is a member of Clarendon Hills' 'Grand Cru' classification.

Every year, the Astralis vineyard produces the most beautiful wine in our cellar. Despite its non-differentiated treatment in the cellar, it always reveals the most rounded, sublime and seamless expression of syrah which ages like a rock.

The vast wealth of this wine's varietal depth extends beyond the parameters of syrah - beckoning superlatives. Amazingly svelte in its balance of varietal depth with restrained power and super finely integrated extract, it is light on its feet and majestic once in focus. Overriding harmony meets an anarchical expression of Australian classic syrah. Lifted florals dance with rich meats, coffee, cola, chocolate, pan forte, turkish delight, graphite, bitumen, cigar tobacco, black cardamom, good quality soy sauce and crushed rocks. It is dense, yet creamy smooth.

This is a wine that is always the most beautiful in our cellar. We recommend it is always decanted. Only the patient will recoup the full dividend of cellaring this masterpiece.

It's hard to believe the 2003 Syrah Astralis Vineyard could be better, but it offers riveting richness, intensity, purity, and equilibrium. Structurally, it is similar to the Piggott Range, revealing abundant amounts of sweet, ripe tannin, and huge extract, richness, and depth. Meant for true connoisseurs who are willing to forget it for 5-8 years, it represents what Roman Bratasiuk and Clarendon Hills do so well... show respect for the great traditions of France, but recognize the extraordinary raw materials that emerge from old vines planted in McLaren Vale. ... Still very closed on the nose, showing cassis and black cherry aromas after much airing. Its color is a powerful, almost glowing, purple and its flavors--a vibrant surge of pure black and blueberries--are just as intense. Very concentrated and tight, with a linear, minerally frame underneath its monstrous tannins. Winemaker Roman Bratasiuk recommends aging for a mimum of 6 years before drinking; if you are as foolish as I and insist on opening a bottle today, decant for a minimum of 6-8 hours. Rating may look stingy by the time Bush finishes his second term.

Clarendon Hills is a small family-run winery based in Clarendon, South Australia. The company was founded by biochemist, Roman Bratasiuk, in 1990. The story of Clarendon Hills is one of passion, dedication and commitment to exception wine. It all began when this biochemist and wine lover decided to produce his own wine. Though he'd never trained as a winemaker, Roman let himself be guided by his refined palate and scientific knowledge. Following his favorite producers and preferred styles, Roman sought to make a version of the wines he loved.

Home to perhaps the world’s most easily recognizable Sauvignon Blanc, Marlborough has a unique terroir that lends a unifying thread to all of its wines. But despite common misconceptions, the wines from this region at the northern tip of New Zealand’s South Island are anything but homogenous. With well-draining stony soils and a dry, sunny climate, the vineyards of Marlborough benefit from wide temperature fluctuations between day and night, which helps to preserve natural acidity in their fruit.

The region’s specialty, Sauvignon Blanc, is beloved for its pungent, aromatic character with notes of exotic tropical fruit, freshly cut grass, and green bell pepper along with a refreshing streak of stony minerality. These wines are made in a wide range of styles, and winemakers take advantage of various clones and vineyards sites as well as fermentation, lees-stirring, and aging regimens to differentiate their bottlings from one another. Also produced successfully here are fruit-forward Pinot Noirs, elegant Riesling, Pinot Gris, and Gewürztraminer, and a wide range of Chardonnay styles, as well as more experimental varieties like Grüner Veltliner and Syrah.

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it’s grown and how it’s made. In Burgundy, Chardonnay produces some of the finest white wines in the world, typically tending towards minimal intervention in the winery and at its best resulting in remarkable longevity. This grape is popular throughout the world, but perhaps its second most important home is in California, where both oaky, buttery styles and leaner, European-inspired wines enjoy great popularity. Oregon, Australia, South America, South Africa, and New Zealand are also significant producers of Chardonnay.

In the Glass

When planted on cool sites, Chardonnay’s flavors tend towards grapefruit, green apple, minerals, and white stone fruit, while warmer locations coax out richer, more tropical flavors of fig, melon, and pineapple. Oak can add notes of vanilla, coconut, and spice (as well as texture), while malolactic fermentation can impart soft, buttery acidity.

Perfect Pairings

Chardonnay is as versatile at the table as it is in the vineyard. The crisp, clean, Chablis-like styles go well with simple seafood, light chicken dishes, and salads. Richer Chardonnays marry well with cream or oil-based sauces.

Sommelier Secret

Since the 1990s, big, oaky, buttery Chardonnays from California have enjoyed explosive popularity. More recently, the pendulum has begun to swing in the opposite direction, towards a clean, crisp style that rarely utilizes new oak. These Old-World style wines have been dubbed the “New California Chardonnays,” and anyone who claims they do not like Chardonnay should give them a try.
