    Cave Spring Cellars was founded in 1986 by grape grower Leonard Pennachetti and wine maker Angelo Pavan. From the beginning, they have vinified vitis vinifera grapes - the noblest grape varieties of the Old World - from vineyards along Niagara's Beamsville Bench. Nestled at the heart of this narrow, fifteen kilometre shelf of the Niagara Escarpment, Pennachetti's Cave Spring Vineyard is one of Niagara's oldest vinifera plantings.

    Wine lovers everywhere - in the Old and New World alike - have long recognized the intimate connection between authenticity of origin and the highest standards of quality in winemaking. At Cave Spring we believe that out wines are unique because they capture what the French call 'goût de terroir', or 'taste of the land' from which they come; and that no amount of artifice - enological or otherwise - could ever replicate the particular flavour profile they achieve. The uniqueness of our wines stems directly from their authenticity of origin.

    Riesling possesses a remarkable ability to reflect the character of wherever it is grown while still maintaining its identity. A regal variety of incredible purity and precision, this versatile grape can be just as enjoyable dry or sweet, young or old, still or sparkling and can age longer than nearly any other white variety. Somm Secret—Given how difficult it is to discern the level of sweetness in a Riesling from the label, here are some clues to find the dry ones. First, look for the world “trocken.” (“Halbtrocken” or “feinherb” mean off-dry.) Also a higher abv usually indicates a drier Riesling.
