The Pechuga expresses a delicate balance in which the smokiness is softened noticeably by the protein and wild fruit. A rich mouthfeel offers flavors of roasted fruit, subtle minerality and a slight smokiness, finishing dry on the back of the palate. The Cupreata agave, known as maguey Papalote in the state of Guerrero, grows wild on the mountain slopes of the Rio Balsas basin. The harvesting of this agave is extremely difficult due to the altitude of the steep slopes where it is found. Cupreata from Guerrero presents a profile starting with sweet floral notes, followed by the aroma of wet earth and subtle minerality, reminiscent of an approaching storm.

Cupreata (or maguey papalote in the state of Guerrero) can only be found in higher-elevation areas (1,200–1,800 meters) in Michoacán and Guerrero, specifically on the slopes of the Rio Balsas basin. It can take up to 15 years to mature and is particularly difficult to harvest because of the angle of the steep slopes. Bozal Pechuga Sacraficio is made from cupreata and is also a pechuga—a mezcal redistilled with fruits, spices, grains and a (usually raw) chicken breast (pechuaga is Spanish for breast). In Bozal Safraficio’s third distillation, an organic chicken (cooked, in this case) marinates with locally sourced fruits, chiles, citrus fruits, raisins, cinnamon and clove for a mezcal that’s richly complex and utterly authentic.

Most often consumed straight or with salt, chilis and an orange, lemon, or lime, Mezcal is an agave-based spirit whose production methods vary widely depending on the region, traditions and preferences of the producer. Rather than boiling or steaming the agave, which is done in Tequila production, Mezcal is made by cooking the agave in wood-fired pits before fermentation. Consequently, Mezcal is often characterized by smoky nuances, which are a product of this alternative production method.
