Winemaker Notes

Exquisite fruit and spice aromas on the nose. On the palate, perfect harmony between structure and elegance: rich, complex, and voluptuous.

Pairs well with lamb, duck and light game.

Fine purity, silkiness and harmony set the stage for aromas and flavors of flowers, cherry, toasty oak and spice. Features a minerally undercurrent, while the finish goes on for close to a minute. Best from 2022 through 2038.

Bouchard has a substantial holding of 3.75ha in Cailleret Dessus, a vineyard it has owned since 1775, all located on shallow clay soils over a limestone bedrock. This is a finely balanced, nuanced Volnay that combines finesse with precision, concentration with depth. Zesty, chalky and long on the palate.

Robert Parker's Wine Advocate
The 2017 Volnay 1er Cru Les Caillerets Ancienne Cuvée Carnot is already extremely charming, bursting from the glass with a lavish bouquet of cassis, dried rose petals, coniferous forest floor and dark chocolate. On the palate, the wine is medium to full-bodied, supple and satiny, with an elegantly textural attack, a nicely concentrated core of fruit and lively acids, concluding with a precise, vibrant finish.

A ripe and agreeably fresh nose offers up aromas of violet, red currant and earth, all of which is trimmed in whiffs of abundant spice as well as enough oak to point out. The mouth feel of the middle weight flavors is more elegant than the Grèves while delivering very good if not truly exceptional depth and persistence on the bitter cherry-inflected finish. This moderately firmly structured effort should drink well after 6 to 8 years of cellaring but reward 10+.

From the heart of the appellation, this has a lot of violet-fruit aromas with a poached-cherry and red-plum core and deep-set spice notes, as well as chalky elements. The theme continues to a chalky texture from the limestone bedrock with fine, compressed tannins and bright red cherries. Drink across the first decade.

COMMENTARY: The 2017 Bouchard Père & Fils Volnay Les Caillerets Premier Cru Ancienne Cuvée Carnot is one of the standard-bearers of the appellation. TASTING NOTES: This wine delivers the complete package. Its aromas and flavors of zesty and biting red fruits should pair it deliciously with grilled salmon fillets. (Tasted: March 14, 2019, San Francisco, CA)

This parcel, 9.3 acres, has been part of Bouchard’s domaine since 1775, the first vineyard purchased by the firm. It produces a dense, earthy Volnay, the wine’s dark cherry-skin flavors resonating within those earthy depths. Full-bore richness makes this a little intense as a young wine, its structure and fruit density built for age.

A little more smudged at the edges and softer in bouquet. Crushed strawberries and fully ripe raspberries. Perhaps just a little heat. Could have been picked earlier, perhaps, but good in its style.

On the hillsides between Pommard and Meursault, Volnay is one of two villages in the Côte de Beaune of Burgundy that is recognized for its extraordinary Pinot Noir. Pommard is the other; the rest of the villages are most known for some of the most exceptional Chardonnay in the world. While Volnay Pinot Noir tends to be light in color and more delicate than that of Pommard, they typically stand on par with each other in regards to quality and demand.

Volnay can’t claim any Grands Crus vineyards but more than half of it has achieved Premier Cru status. Volnay Premiers Crus vineyards stretch across the entire village from northeast to southwest, abutting and actually falling “into” Meursault. Where they merge is a vineyard called Les Santenots. Pinot Noir grows in this Meursault Premier Cru but since that village is most associated with stellar whites, the Pinot Noir from Les Santenots, takes the name Volnay Santenots. Immediately above it are Volnay’s other prized Premier Cru, Le Cailleret, Champans, Clos des Chênes and Le Cailleret.

Volnay Pinot Noir are earthy with red or blue fruit. Aromas such as smoke, herbs, forest, cocoa and spice are common and on the palate they are gorgeous and concentrated with finesse but won’t truly charm you without some age.

Thin-skinned, finicky and temperamental, Pinot Noir is also one of the most rewarding grapes to grow and remains a labor of love for some of the greatest vignerons in Burgundy. Fairly adaptable but highly reflective of the environment in which it is grown, Pinot Noir prefers a cool climate and requires low yields to achieve high quality. Outside of France, outstanding examples come from in Oregon, California and throughout specific locations in wine-producing world. Somm Secret—André Tchelistcheff, California’s most influential post-Prohibition winemaker decidedly stayed away from the grape, claiming “God made Cabernet. The Devil made Pinot Noir.”
