Distiller Notes
Dovetail is blended to highlight some of our favorite flavors. Woody bourbon; terroir driven Dunn Cabernet; toasted french oak; Late Bottled Vintage Port pipes; black strap molasses casks; all working in tandem to create a buttery and deep whiskey as unique as it is delicious. Dovetail took almost a year to get right, from blending to labeling, all coming together in a seemingly perfect point. Rose gold with highlights of worn copper. Opens with mature aromas both sweet (canele´, panna cotta, cre`me de noyaux) and savory (walnut oil, leather). This is followed quickly by a vast array of fruit derived both from the spirit (smoked apricot, grapefruit peel) as well as the cask treatment (sloe gin, damson jam). The aroma is high toned, pungently floral and herbaceous, with subtle, balancing pops of minerality.On the palate, darker (cocoa, molasses, burnt marshmallow) and spicier (cola, nutmeg, Tellicherry peppercorn) than the nose, an effect well-complemented by the cask treatment and rendered more complex by the savory and herbaceous themes running throughout. A sweet and elegant signature of rose jelly on the finish, with chestnut honey, and Pineau des Charantes that also features hazelnut, eucalyptus, and Corsican mint.

Some whiskeys have already peaked at a quarter-century, but this one, distilled in Indiana and finished in sercial madeira casks, is at its apex. Caramel-covered peanuts, candied orange, fresh-baked bread, Toblerone, cinnamon ginger snaps, blueberry cobbler, black tea, and plenty of oak on the nose. The palate is supple and elegant, with peanut brittle, cherry cordial, milk chocolate, blueberry, horehound candy, cola, white pepper, ginger, roasted pecans, and refined oak. Leave plenty of time to enjoy the finish, with its subtle white pepper and dark fruit undertones.
Capturing a broad range in one category, American Whiskey refers to any spirit made in America by distilling a mash of fermented grains—typically corn, wheat, rye or barley. American Whiskey must be distilled to no more than 95% alcohol and bottled at 40% or higher. In order to be labeled a straight Whiskey, it also must be aged in white oak barrels for a minimum of two years and not contain any added colors or flavors.
