This is a nine-year-old Bourbon finished for 19 months in barrels that previously held Phifer Pavitt Cabernet Sauvignon. The end result is a nut-brown hue and espresso-tinged aroma. The palate opens fiery but flavorful, echoing that espresso note and layered with dried cherry, mocha, and a distinct orange peel tone on the exhale.

Aromas of oak, dried fruit, and horse saddle set up for a sucker punch of leather boxing glove from this big and brawny bourbon. But it also dances with grace, tickling the tongue with sweet spices, dark bitter chocolate, and wisps of tobacco. Intriguing notes of horehound, cocoa-dusted almonds, and baked apples are lip-smacking good, and it handles water well, revealing ever more depth.
Although Bourbon may be produced anywhere in the United States, it is most commonly associated with Bourbon County, Kentucky, where it has been produced since the late 18th century. Made from a mash bill containing at least 51% corn, the Bourbon Whiskey distillate must be aged in new, charred white oak barrels. Bourbon Whiskeys are bottled at eighty proof (40% abv) or higher and cannot contain any added color or flavor. A versatile spirit that can be sipped neat, with water or on the rocks, it also performs nicely added to cocktails like the Old Fashioned.
