      Distiller Notes

      The nose has notes of honey, fruit cocktail, honeysuckle, soft leather, floral musk, hint of mint/eucalyptus, tea tree oil, cinnamon redhots, some unripe stone fruit, dried nectarines, slight tobacco, simple syrup, jasmine and a little vanilla. The taste has notes of light fruit cocktail, subtle leather spice, dried fig/plum, honey, mild rosemary, sweet tea, mint, oak, kiwi, rye, grapefruit, and slight anise. The finish is medium lingering finish, hint of spice, honey and leather spice fade, and a minty evaporation.

      In 2008, Balcones was nothing more than an idea driven by a passion to create something original and authentic, right here in the Heart of Texas. It all started in an old welding shop under a bridge in Waco. For the next year, they replaced the roofing, knocked out walls, laid brick, cut pipes, installed copper pot stills from Portugal, and shoehorned a whisky distillery inside that quaint building. Proud of what they had accomplished on their own, they began distilling in 2009.

      First prepared by 13th century Italian monks as herbal medicines and elixirs, Liqueurs are distilled spirits that have been combined with flavoring agents. A range of herbs, spices, nuts, fruits and flowers can be used, and a sweetener such as sugar or corn syrup is often added. While typically rather sweet, some examples are herbaceous or tart and pair exceptionally well with desserts or act as a delightful addition to cocktails.
