Winemaker Notes
The Viking Vineyard predictably produces deeply hued wine stemming from small pigmented grapes. This Cabernet Sauvignon does not lack concentration or power, exuding flavors of plum, cherry, and single-origin chocolate with accents of graphite, exotic spices, and oak barrel spice. A taut and firm wine, the 2020 vintage shows off beautifully integrated tannins and a silky mouthfeel that allows for near-term enjoyment or the ability to rest in the cellar for years.

The 2020 Cabernet Sauvignon Viking Estate Vineyard was aged for 20 months in 50% new French oak. Medium ruby, it has a core of blackcurrant and Morello cherry with touches of bell pepper, thyme, cedar, dark chocolate and graphite. The palate is medium-bodied with fine, grainy tannins, rounded acidity and a concentrated core of pleasantly herbal fruit. Drink it over the next 3-5 years.

Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
