Winemaker Notes

Screw capped, this bottling emphasizes the wine’s current drinking style. Aromas of blackberry tea, dried rosebuds, leafy forest floor and miso broth begin the tasting impression followed by flavors of baked black cherries, roasted plum tomatoes, steeped earl grey tea and brown spices. Drink now through 2021.

Pair with Salmon in lemon-oregano oil with plum tomato, confit duck legs with leeks and green olives, poached lamb sausage with dried persimmons and thyme

Thin-skinned, finicky and temperamental, Pinot Noir is also one of the most rewarding grapes to grow and remains a labor of love for some of the greatest vignerons in Burgundy. Fairly adaptable but highly reflective of the environment in which it is grown, Pinot Noir prefers a cool climate and requires low yields to achieve high quality. Outside of France, outstanding examples come from in Oregon, California and throughout specific locations in wine-producing world. Somm Secret—André Tchelistcheff, California’s most influential post-Prohibition winemaker decidedly stayed away from the grape, claiming “God made Cabernet. The Devil made Pinot Noir.”

Covering the Santa Lucia Range in the northwestern portion of the greater Paso Robles appellation, the Adelaida District AVA reaches from 900 feet to over 2,000 feet in elevation. The appellation does well with Rhone and Bordeaux varieties as well as Zinfandel.
