Winemaker Notes

Translucent yellow. Persistent and vigorous pinpoint bubbles; generous mousse. Rich red and citrus fruits highlighting juicy honey crisp apple and fresh lemon. Yeasty glazed donut; brioche toast balanced with soft florals and chalky minerality. Racy lime, sugared lemon wedge, pineapple and kumquat fruit notes backed by hints of integrated yeastiness throughout. Very bright and fruit forward, salivating crisp finish.

Representing the topmost expression of a Champagne house, a vintage Champagne is one made from the produce of a single, superior harvest year. Vintage Champagnes account for a mere 5% of total Champagne production and are produced about three times in a decade. Champagne is typically made as a blend of multiple years in order to preserve the house style; these will have non-vintage, or simply, NV on the label. The term, "vintage," as it applies to all wine, simply means a single harvest year.

Perhaps the most highly regarded appellation within Monterey County, Santa Lucia Highlands AVA benefits from a combination of warm morning sunshine and brisk afternoon breezes, allowing grapes to ripen slowly and fully. The result is concentrated, flavorful wines that retain their natural acidity. Wineries here do not shy away from innovation, and place a high priority on sustainable viticultural practices.

The climatic conditions here are perfectly suited to the production of ripe, rich Pinot Noir and Chardonnay. These Burgundian varieties dominate an overwhelming percentage of plantings, though growers have also found success with Syrah, Riesling and Pinot Gris.
