    Winemaker Notes

    A great example of what is helping define the Paso Robles region, this wine has a complex bouquet of boysenberry jam, spicy cherry cola, fresh tobacco leaves, hints of cedar and smoky mesquite. The fruit and spice dominated palate is sure to appeal to Cabernet drinkers, red wine fans, and anyone with an affinity for the wines of the Paso Robles region. Medium-bodied, with ample structure and a satiating butterscotch finish.

    Courtney Benham acquired the historic Martini & Prati winery in July 2003, which is now Martin Ray Winery and the home of their Tasting Room. The Tasting Room structure, dating back to the 1900's, used to serve as a stable and bunkhouse where Italian immigrants stayed during harvest and crush. The winery also houses a 1 million gallon production facility.

    Established in 1881 as the Twin Fir Winery, the historic site is distinguished as the oldest winery in continuous operation in Sonoma County and one of the oldest wineries in California. The winery was able to stay in operation during prohibition by selling sacramental wines by train to Rabbis through a winery in New York. Originally known as Martini & Prati, which was established in 1902, the winery was run by five generations of the Martini family.

    Thirty 11,000 gallon old-growth redwood tanks dating back to 1904 are still used at the winery and can be viewed during the winery tour. French oak barrels are primarily used due to its superb quality and oak accents that give the wines vanilla, spice and often herbaceous aromas and flavor. Most of the barrels are used for 5 to 6 years, depending upon the percentages of new, neutral and old wood they want to use on a particular wine.

    As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

    Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

    The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
