Spain's preeminent varietal Cabernet is excellent in its 40th rendition. This single-vineyard wine opens with dark, brooding aromas of rooty spice, licorice, tar, herbs, cassis and prune. In the mouth, this is wiry and tight at the core, but friendly around the edges. Flavors of currant, toast, vanilla, pepper and barbecue sauce finish with ripping acidity but also cuddly, creamy weight. Drink from 2017 through 2030.

Always a good Mediterranean Bordeaux blend, the 2010 Gran Coronas Mas la Plana Estate Black Label is the 40th release of this wine which has obviously changed over time, but has always been Cabernet Sauvignon-based. Loads of graphite, peat, pencil lead and ripe blackberries fused to undertones of tobacco, cedar wood and plenty of black pepper make it a textbook example of a warm-climate Cabernet in a perfectly ripe vintage. It has very fine, noble tannins and great acidity. This is one of the most balanced vintages of Mas La Plana I remember, and it should have a great development in bottle. Approachable now, it should age effortlessly for 20+ years.

In 1870, when the Torres family founded its wine-making and exporting company, they understood the importance of both respecting traditions and maintaining the utmost quality of their products. Today, thanks to this hundred year old commitment, Bodegas Torres is a strong leader in the Spanish wine and brandy industry.

Known for bold reds, crisp whites and distinctive sparkling and fortified wines, Spain has embraced international varieties and wine styles while continuing to place primary emphasis on its own native grapes. Though the country’s climate is diverse, it is generally hot and dry. In the center of the country lies a vast, arid plateau known as the Meseta Central, characterized by extremely hot summers and frequent drought.

Rioja is Spain’s best-known region, where earthy, age-worthy reds are made from Tempranillo and Garnacha (Grenache). Rioja also produces rich, nutty whites from the local Viura grape.

Ribera del Duero is gaining ground with its single varietal Tempranillo wines, recognized for their concentration of fruit and opulence. Priorat, a sub-region of Catalonia, specializes in bold, full-bodied red blends of Garnacha (Grenache), Cariñena (Carignan), and often Syrah and Cabernet Sauvignon. Catalonia is also home to Cava, a sparkling wine made in the traditional method but from indigenous varieties. In the cool, damp northwest region of Galicia, refreshing white Albariño and Verdejo dominate.

Sherry, Spain’s famous fortified wine, is produced in a wide range of styles from dry to lusciously sweet at the country’s southern tip in Jerez.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon is now the world's most planted grape variety. Inherently high in tannins and acidity, the best bottlings of Cabernet can age beautifully, with the ability to last fifty years or more. Cabernet Sauvignon flourishes in temperate climates like Bordeaux's Medoc region and forms the base of the Medoc reds, which are typically mostly Cabernet with Merlot and smaller amounts of some combination of Cabernet Franc, Malbec and Petit Verdot. (Enjoying a great deal of success in various regions around the world, this blend is now globally referred to as a Bordeaux Blend.) Cabernet Sauvignon has enjoyed great success throughout the world, particularly in the Napa Valley, and is responsible for some of the world’s most prestigious and sought-after “cult” wines.

High in color, tannin and extract, Cabernet Sauvignon expresses notes of blackberry, cassis, plum, currant, spice and tobacco. In Bordeaux and elsewhere in the Old World you'll find the more earthy, tannic side of Cabernet, where it is typically blended to soften tannins and add complexity. In warmer regions like California Washington, Argentina, Chile and Australia, you can typically expect more ripe fruit flavors upfront.

Perfect Pairings

Cabernet Sauvignon is right at home with rich, intense meat dishes—beef, lamb and venison, in particular—where its opulent fruit and decisive tannins make an equal match to the dense protein of the meat. With a mature Cabernet, opt for tender, slow-cooked meat dishes.

Sommelier Secrets

Despite the modern importance and ubiquity of Cabernet Sauvignon, it is actually a relatively young variety. In 1997, DNA profiling revealed the grape to be a spontaneous crossing of Cabernet Franc and Sauvignon Blanc which took place in 17th century southwestern France.
