Often mistaken for an Old World wine in blind tastings, the Chardonnay displays the earthy mineral and mature fruit character typical of Idaho terrior. Nuances of flint, clay, pear, quince, and citrus run through the wine. Blessed with an admirable acid backbone, the wine will continue to take on additional harmony and complexity with further aging.
Food Affinities: This wine may be enjoyed with a variety of meals, elegant or casual. My personal favorite pairings include deep-fired calamari, grilled chicken Caesar salad, and goat cheese quiche.
