Winemaker Notes

The wine displays a lemon color of medium intensity. Citrus aromas and white flowers dominate on the nose, along with the characteristic mineral Assyrtiko undertones. Dry on the palate, with high, yet balancing acidity, and great complexity, underlined by mineral, fruity and floral flavors. Long and evolving aftertaste.

An ideal partner for fish and seafood dishes.

The 2015 Assyrtiko is unoaked and comes in at 12.9% alcohol. The diversity of styles on the island can sometimes be fascinating. Comparing this relatively fruity and clean (if still very tense and gripping) Assyrtiko with, say, the stony Canava Roussos in this report is an interesting contrast. The vintages are different, however, and this has the advantage of exuberant youth, the young fruit being simply delicious just now, but the structure being far more interesting. This is impressively balanced, respectably concentrated and beautifully structured. It is perhaps the best regular Assyrtiko that I have seen from Santo Wines.

A crisp white variety full of zippy acidity, Assyrtiko comes from the volcanic Greek island of Santorini but is grown increasingly wide throughout the country today. Assyrtiko’s popularity isn’t hard to explain: it retains its acid and mineral profile in a hot climate, stands alone or blends well with other grapes and can also withstand some age. Somm Secret—On the fairly barren, windswept Mediterranean island of Santorini, Assyrtiko vines must be cultivated in low baskets, pinned to the ground. The shape serves to preserve moisture and protect the growing grapes in its interior.
