      Winemaker Notes

      We pick the organic Vin de Glaciere Riesling grapes at around 22.5% sugar in order to preserve the natural acidity of the grapes. The grapes are then frozen and pressed frozen, resulting in a concentrated press juice (about 36% sugar) and a low yield (about half our yield compared to non-frozen grapes). The concentrated juice is fermented until we reach 18.5% Residual Sugar.

      Taking a very different approach to reach its mouthfilling richness, this wine is not left on the vine to acquire its concentration but is, instead, brought into the winery and frozen. It is then pressed and the water/ice separates from the sweet juice. The result, while less complex, is a wonderful expression of Riesling flowers and peaches in a deep and luscious wine. Its price recognizes that it is not as layered as late harvest Riesling can get, yet its rating accepts that it is an absolutely delicious wine for sipping or service with light desserts.

      Riesling, simply, is the most versatile, complex and food-friendly of all the noble grapes. if you enjoy inspiring your palate, then Riesling is your ideal wine. No other varietal so purely expresses terroir. Washington's Columbia Valley - home of Pacific Rim - provies the ideal soils and climate for growing Riesling. Purity is at the core of Pacific Rim's winemaking philosophy. They exclusively use stainless steel tanks, allowing the true character of Riesling to speak for itself, they do not use malolactic fermentation and their wines are fermented only with native yeasts. Pacific Rim produces 10 different Rieslings from bone dry to sticky sweet, and Riesling represents 95% of all the wines they produce. Pacific Rim is an Organic and Biodynamic certified winery.

      A large and geographically diverse AVA responsible for a wide variety of wine styles, the Columbia Valley AVA is home to 99% of Washington State’s total vineyard area. A small section of the AVA extends into northern Oregon as well. Because of its vast size, it is necessarily divided into several distinctive sub-AVAs, including Walla Walla Valley and Yakima Valley—which is further split into three more even smaller AVAs. A region this size will of course have varied microclimates, but on the whole it experiences cold winters and long, dry growing seasons. Frost is a common risk during winter and spring. The towering Cascade mountain range creates a rain shadow, keeping the valley relatively rain-free throughout the year, necessitating irrigation from the Columbia River. The lack of humidity combined with sandy soils allows for vines to be grown on their own rootstock, as phylloxera is not a serious concern.

      Red wines make up the majority of production in the Columbia Valley. Cabernet Sauvignon is the dominant variety here, where it produces wines with a pleasant balance of dark fruit and herbs. Wines made from Merlot are typically supple, with sweet red fruit and sometimes a hint of chocolate or mint. Syrah tends to be savory and Old-World-leaning, with a wide range of possible fruit flavors and plenty of spice. The most planted white varieties are Chardonnay and Riesling, the styles of which depend on the warmth of the site. Citrus and green apple are common to both in cooler sites, while warmer vineyards will produce riper, fleshier stone fruit flavors.

      Apart from the classics, we find many regional gems of different styles.

      Late harvest wines are probably the easiest to understand. Grapes are picked so late that the sugars build up and residual sugar remains after the fermentation process. Ice wine, a style founded in Germany and there referred to as eiswein, is an extreme late harvest wine, produced from grapes frozen on the vine, and pressed while still frozen, resulting in a higher concentration of sugar. It is becoming a specialty of Canada as well, where it takes on the English name of ice wine.

      Vin Santo, literally “holy wine,” is a Tuscan sweet wine made from drying the local white grapes Trebbiano Toscano and Malvasia in the winery and not pressing until somewhere between November and March.

      Rutherglen is an historic wine region in northeast Victoria, Australia, famous for its fortified Topaque and Muscat with complex tawny characteristics.
