    Winemaker Notes

    The fruit for this Bin 7000 Chardonnay is selected for its obvious varietal fruit character. The skins are left in contact with the must for about 10 hours. The time on the skins is critical in producing a Chardonnay that has both flavour and lightness. Oak maturation for three months is used to give character but not a great deal of oak taste.
