Half of the premiers crus of Gevrey-Chambertin lie scattered around the perimeter of the grands crus; the other half occupy a steep, southeast-facing slope to the north, and are superior to the former by virtue of their exposition and calcareous clay soils. The Lavaux vineyard is situated in the northwest extremity of the commune at the top of the slope, facing southward and adjacent to Les Verriolles and Les Estournelles, and often appends the name of the Clos Saint-Jacques vineyard, nearby, to its own. With 24 acres it is Gevrey- Chambertin's largest premier cru. Domaine Louis Jadot is proprietor of .54 acres in this superb but atypical cru acquired in 1985 through the purchase of Domaine Clair Daü. It produces a wine of exceptional finesse and a suppleness unusual for a wine of Gevrey, with delicate tannic structure and silky, refined fruit and an elegant, lingering finish.

Supple and medium-bodied, with firm minerally acidity framing the flavors of red fruits, licorice and game. Less firmly structured than the Clos Saint-Jacques but finishes with excellent length and grip."

Hundreds of millions of years ago, the area now called Côte d'Or was under a warm ocean whose sea floor has, over time, shifted and decomposed into various layers of limestone, sandstone and clay interspersed with ancient fossilized sea creatures. This is what is referred to as the famous escarpment upon which all of the highly sought-after Grands Crus and Premiers Crus vineyards can be found. In other words, from north to south, the best vineyards of Gevrey-Chambertin, Morey-St-Denis, Chambolle-Musigny, Vougeot, Vosne-Romanée, Flagey-Echezeaux, Nuits-St-Georges, Aloxe-Corton, Pommard and Volnay follow the path of this ancient sea bed.
