The Wiseman Straight Rye has rich and spicy nose, with hints of fresh rye bread, slight hints of sweet caramel and cinnamon. It tickles the senses with its spice inviting you to taste. It has a spicy character that instantly fills the mouth with rich rye flavor and tickles the taste buds. It has a long finish starting out as fresh Rye bread, then slowly moving toward buttered cinnamon toast, ending with just hint of English walnut.
This whiskey is made with a mashbill of 95% rye.
Charles Dedman started the original Kentucky Owl Bourbon Distillery in 1879 on the banks of the Kentucky River, which was one of Kentucky’s original distilleries. For decades, he produced "the wise man’s bourbon" before the distillery closed in 1916 due to Prohibition when all remaining stocks of Kentucky Owl whiskey were put on barges to Frankfort and housed in government warehouses. The government guaranteed safe storage, but when the warehouse mysteriously burned down in 1923, the government failed to pay any compensation, rendering the entire stock - close to 250,000 gallons of Kentucky Owl bourbon - a total loss. Due to this significant loss, the Dedman estate never distilled another drop of Kentucky Owl whiskey until 2014 when the brand was reborn by Charles’s great, great grandson, Dixon Dedman.
Known for its peppery, spicy bite, Rye serves as the ideal base for cocktails like the Sazerac, Manhattan or Old Fashioned. In order for a spirit to be labeled an American Rye Whiskey, the mash bill must be comprised of at least 51% rye grain. The remainder of the mash is most often a combination of malted barley, wheat or corn. After distillation is complete, the spirit is transferred to unused, charred white oak barrels for a minimum of two years, though many producers choose to age longer.
