Winemaker Notes

Synthesis is an approachable Cabernet Sauvignon blend that has aromas of both red and black fruits and cassis, followed by flavors of black cherry and plums. Smooth and approachable, this wine is great on its own but pairs with virtually everything.

Blend: 82% Cabernet Sauvignon, 18% Petite Sirah

COMMENTARY: THE 2017 Halter Ranch Synthesis is a lovely blend of Cabernet Sauvignon and Petite Sirah. TASTING NOTES: This wine is inviting from the start and finishes nicely. Pair its generous aromas and flavors of black fruit and oak with grilled short ribs. (Tasted: February 11, 2020, San Francisco, CA)

Historic Halter Ranch is a vineyard and winery located in the heart of the Paso Robles' Westside Adelaida District. California’s Central Coast Wine Country has ideal conditions for growing superior wine grapes and producing world-class wines. The 100% estate-grown wines are sustainably farmed on westside limestone soils. Tradition and innovation mix at Halter Ranch to produce Bordeaux and Rhône-style wines of the highest quality.

After years of planning and construction, the new winery facility is complete. Architect John Mitchell worked closely with the Halter Ranch winemaking team to design this state-of-the-art facility. Multi-level, the winery utilizes gravity flow in all aspects of the winemaking process. Gravity flow allows the winemaker to handle the fruit in the gentlest way possible, without pumping, from the de-stemmer at the top level, into the tanks, and ultimately into the barrel.

With hundreds of red grape varieties to choose from, winemakers have the freedom to create a virtually endless assortment of blended wines. In many European regions, strict laws are in place determining the set of varieties that may be used, but in the New World, experimentation is permitted and encouraged. Blending can be utilized to enhance balance or create complexity, lending different layers of flavors and aromas. For example, a variety that creates a fruity and full-bodied wine would do well combined with one that is naturally high in acidity and tannins. Sometimes small amounts of a particular variety are added to boost color or aromatics. Blending can take place before or after fermentation, with the latter, more popular option giving more control to the winemaker over the final qualities of the wine.
