Halter Ranch Vineyard Cabernet Sauvignon 2017
Cabernet Sauvignon is our most widely planted varietal at Halter Ranch with over 70 acres under vine. Our Cabernet Sauvignon possesses a classic profile with aromas of dark cherry and graphite. Bright and fresh on the palate, this wine has flavors of red and black currants with a hint of pencil shavings. Pair with wood-fired pizza, braised game, and roasted or grilled meats.
After years of planning and construction, the new winery facility is complete. Architect John Mitchell worked closely with the Halter Ranch winemaking team to design this state-of-the-art facility. Multi-level, the winery utilizes gravity flow in all aspects of the winemaking process. Gravity flow allows the winemaker to handle the fruit in the gentlest way possible, without pumping, from the de-stemmer at the top level, into the tanks, and ultimately into the barrel.
Covering the Santa Lucia Range in the northwestern portion of the greater Paso Robles appellation, the Adelaida District AVA reaches from 900 feet to over 2,000 feet in elevation. The appellation does well with Rhone and Bordeaux varieties as well as Zinfandel.

Inherently high in tannins and acidity, the best bottlings of Cabernet can age beautifully for decades. Cabernet Sauvignon flourishes in temperate climates like Bordeaux where it forms the base of the Medoc reds. These blends are typically mostly Cabernet with Merlot and smaller amounts of some combination of Cabernet Franc, Malbec and Petit Verdot. (Enjoying a great deal of success in various regions around the world, this blend is now globally referred to as a Bordeaux Blend.) Cabernet Sauvignon from the Napa Valley is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines.
Tasting Notes for Cabernet Sauvignon
Cabernet Sauvignon is a dry red wine rich in color, tannin and extract. It expresses notes of blackberry, cassis, plum, currant, spice and tobacco. In the Old World you'll often find the more earthy side of Cabernet. In warmer regions like California, Washington, Argentina, Chile and Australia, you can typically expect more upfront fruit flavors.
