"Bright red-ruby. Wild red berries, peony and a whiff of medicinal austerity on the nose. In the mouth this displays superb clarity and class, conveying an impression of great intensity without any excess weight. This literally vibrates on the back end, finishing with an explosive whiplash of fruits and minerals and a broad dusting of tannins. The yield here was around 35 hectoliters per hectare, according to Roumier."

"Roumier vinifies separately and later assembles the fruits of white chalk and red (iron-rich) parcels that inform his 2005 Bonnes Mares. At the time of my visit he had retained one pure barrel of each component as an investigation into terroir and the results were as fascinating as the blended wine is fascinatingly and profoundly beautiful. The ferrous lot (55% of the final assemblage) displays ripe blackberry and raspberry berries, along with (red soil-born) pungent smokiness, Chartreuse-like herbal and floral essences. A liqueur-like presentation of black fruits temporarily overshadows the mysterious (white rock-born) meld of chalky minerality and beef marrow that wells up gradually on a creamy palate with tannins of utmost refinement. The tension and energy are riveting – lending the wine a dynamic, fleet-of-foot impression for all of its manifestly huge extract – with incisive brightness of palate-staining fruit and vibrant minerality leading to a finish of sensational clarity and length. Even here, by the way, Roumier employs only around 40% new wood. One senses that Christophe Roumier considers 2005 a high point of his career, and my visit with him was among the high points of my recent trip. He describes this as "a classic vintage lending itself to very calm, classic vinification," which given the opportunities afforded by perfectly healthy, firm, dry, ripe fruit involved triage almost solely to remove ladybugs, and included around 25% whole clusters in the fermenters at the Premier Cru level and 50% at that of Grand Cru."

From its beginnings all the way up to the present, Domaine Georges Roumier has maintained one of the best reputations in Burgundy. Their superb wines are also amazingly dependable and consistent in quality. Georges Roumier began the enterprise in 1924 and operated it until his retirement in 1961, when the estate was divided among his children. After his death in 1965, his son Jean-Marie ran the domaine and made the wines. Adopting his father's métier, Jean-Marie's son Christophe became a talented winemaker as well, and bought out his uncles in 1992.

In the vineyard, Christophe Roumier prefers a high vine age and rigorous pruning, resulting in small yields. In the winery, all aspects of the Roumier vinification are completely traditional: a very warm, 18 day maceration, use of 25% new wood barrels (with a slightly higher percentage for the Grands Crus), and egg white fining. Since 1988 the domaine has discontinued the practice of filtration, and the entire cellar has been air-conditioned, allowing a 4-5 day pre-fermentation maceration of grapes.

Domaine Georges Roumier is one of the finest sources of classic, long-lived red Burgundies, with wines that demonstrate fruit, spice, and balance, with substantial tannins. Simply put, Roumier wines are brilliantly made. They are rich, fragrant wines with characteristic aromas of cherries and berries, and often need 4-5 years to show their great depth and harmony. They are also very long-lived, lasting up to twenty years.

This is what is referred to as the famous escarpment upon which all of the highly sought-after Grands Crus and Premiers Crus vineyards can be found. In other words, from north to south, the best vineyards of Gevrey-Chambertin, Morey-St-Denis, Chambolle-Musigny, Vougeot, Vosne-Romanée, Flagey-Echezeaux, Nuits-St-Georges, Aloxe-Corton, Pommard and Volnay follow the path of this ancient sea bed.
