    Winemaker Notes

    For Cuvée Sauvage, we start with our finest lots from cool Carneros. We don't add yeast—we just put the juice in barrels in a special corner of the cellar and wait. And wait. Unlike cultured yeasts, wild yeast comes in many strains, reflective of the vineyard terroir. They work in a relay, and as one strain finishes, another starts, each adding its own personality to the wine, giving layers of complexity to each lot —which is why we go to the extra effort of "going wild."

    Each barrel has a distinct aroma and flavor profile. Thus, Cuvée Sauvage offers a unique opportunity to exercise the art of blending.

    Franciscan is one of Napa Valley's most venerable wineries, reaching back more than three decades. Franciscan wines take their signature style - rich, vibrant flavors framed by supple tannins - from the ideal climate offered by Napa Valley's cool, southern half and from the time-honored tradition of small-lot winemaking, blending from hundreds of barrels to craft fine wines that fully express the classic Bordeaux varieties.

    Franciscan was founded in 1972 by a group of lawyers and doctors from San Francisco who decided to try turning their passion for wine into a business. In 1985, Agustin Huneeus, a Chilean exile who had built Concha y Toro in his native country, took over the helm at Franciscan. Huneeus refocused the winery on using the superlative grapes growing in its own vineyards, rather than sourcing from outside.

    Today, Franciscan's wines are crafted under the exacting eye of Janet Myers, who came to Franciscan in August 2003 as associate winemaker after working in the Margaret River region and Beaulieu Vineyard, Stag's Leap Wine Cellars and Louis Martini. The winery remains committed to its tradition of small-lot winemaking, with small batches averaging just 150 to 1,500 cases. The image of a hand-operated wine press on Franciscan's logo and wine labels reflects this small lot approach to winemaking.

    Best known for lusciously sweet dessert wines but home to many distinctive dry whites and reds, Hungary is an exciting country at the crossroads of tradition and innovation. Mostly flat with a continental climate, Hungary is almost perfectly bisected by the Danube River (known here as the Duna), and contains Central Europe’s largest lake, Balaton. Soil types vary throughout the country but some of the best vines, particularly in Tokaji, are planted on mineral-rich volcanic soil.

    Tokaji, Hungary’s most famous wine region, is home to the venerated botrytized sweet wine of the same name, produced from a blend of Furmint and Hárslevelű. Dry and semi-dry wines are also make in Tokaji, using the same varieties. Other native white varieties include the relatively aromatic and floral, Irsai Olivér, Cserszegi Fűszeres and Királyleányka, as well as the distinctively smoky and savory, Juhfark. Common red varieties include velvety, Pinot Noir-like Kadarka and juicy, easy-drinking Kékfrankos (known elsewhere as Blaufränkisch).
