Winemaker Notes

Cabernet Sauvignon has an affinity to some very specific growing regions in the world. Bordeaux is obviously one - the Napa Valley is another. Within the Napa Valley, Rutherford and St. Helena are synonymous with great Cabernet. The vineyard surrounding the winery is unique with many exposures and soil types. Interestingly, it forms the northern boundary of the Rutherford Appellation and the Southern Boundary of the St. Helena Appellation. This wine is produced from grapes from both sides of the "border!" We harvest our grapes by hand and carefully sort out any leaves or grapes that do not meet our high standards. After destemming and crushing the grapes, the fruit is fermented in stainless steel containers, which allow us to heat or chill the juice to obtain optimum temperatures. After aging for slightly more than two years in French oak barrels, the wine is bottled without fining. The 1997 Cabernet shows the forward fruit character that is synonymous with this vintage. Its generous fruit and approachibility is unusual in a young Cabernet. It combines the dusty, chocolatey character of Rutherford with the deep berry characteristics of St. Helena

Flora Springs is a family endeavor that epitomizes hard work, dedication and teamwork . The vitality of this family is obvious as they set about the task of growing great grapes and making absolutely delicious wine.

It all began over 20 years ago, when Jerry and Flora Komes bought the first vineyard - a vineyard with lots of history, great soils and two ghost wineries. Their retirement project became a lifetime passion for son John Komes and daughter Julie Garvey and their families. John quickly talked the family (including another brother Mike Komes) into making wine. Julie worked side by side with John as the first two years they made the wines. Julie’s husband Pat Garvey took over the vineyard side of things. In 1980, Ken Deis was hired as winemaker and he has been part of the family ever since.

Winemaker Ken Deis makes use of every tool at his disposal. First of all, he trusts his senses: The feel of the berry in his fingers, the taste of the fruit and then the wine, the smells during fermentation. A winemaker needs to understand the source of his fruit and Ken has worked closely with vineyard manager Pat Garvey for more than 20 years so that they can anticipate the challenges that each vintage brings. Ken has also adopted the same curiosity that the entire Komes-Garvey family has and it has paid off royally in the quality of his wines.

Zinfandel

Unapologetically powerful, heady, and fruit-forward, Zinfandel is often thought of as a truly Californian grape, though in fact it is anything but. This variety has followed an intriguing trajectory to reach its adoptive home, beginning, surprisingly, in Croatia. Originally known as Tribidrag, it first made its way to southern Italy where it became known as Primitivo. From there it eventually migrated to what is now unarguably its most successful outpost, in California, and has thrived throughout the state. Of course, this is also the grape of White Zinfandel, a sweet pink wine that enjoyed great popularity in the 1980s and 90s. Though White Zin still has a significant following, today the variety is increasingly associated with the red version.

In the Glass

Zinfandel commonly features a bold, plush texture and notes of dark plum, blackberry, sweet spice, black pepper, dark chocolate, leather, and licorice, and can often be described as “jammy” and a little bit sweet. Very ripe examples may express a hint of dried fruit like raisin, fig, or prune. Despite its significant alcohol and weight, Zinfandel has very smooth, gentle tannins.

Perfect Pairings

Zinfandel is a powerfully flavored wine, mingling happily with bold food like brisket, lamb shanks, pork ribs, or anything barbecued. If care is taken with regards to alcohol levels, Zinfandel’s hint of sweetness can work well with milder Indian-spiced dishes like lamb curry.

Sommelier Secret

Thanks to its popularity both for home winemaking and as communion wine, many Zinfandel vines were able to survive prohibition, leading to the abundance of "old vine" Zinfandels. These low-yielding vines tend to produce wine that is concentrated, complex, and elegant.
