This wine is radiant, pure and vibrant. It is a story of seduction and sensuality.

The 1999 Harvest:
Changeable, often unexpected, weather. Average temperatures were high and a very dry period gave way to almost tropical conditions in late summer, with strong winds and frequent hailstorms. The rainfall during harvesting did not affect this healthy and abundant crop with an exceptionally powerful and well-rounded character.

On The Nose:
This wine is full of life, with a fresh nose that dances through a spiral of aromas, blending hints of angelica, dried flowers, pineapple, coconut, cinnamon, cocoa and tobacco.

In The Mouth:
With a fullness in the mouth, its earthy, smoky, pearly complexity rises to the surface, underscored by the vibrant warmth of peppery spice. The sensation of intensity develops and melts into a deep, rounded heart, with a fruity, exotic maturity and a slight touch of aniseed. This sensation, almost unsettling, is even more pronounced in the finish, while the notes of spice, still present, remain discreet, with toasted, iodine flavors. p> 96 points Robert Parker in the Hedonist's Gazette:
"I was fortunate to have the newly released 1999 Dom Pérignon, which is a spectacular Champagne. Based on one bottle, I would not rate it as highly as the 1996 or 1990, but it is much better than the 1998, and appears to have more body and richness than the 1995, also a top-notch vintage. The 1999 should have at least 20 years of life ahead of it."

Dom Pierre Perignon set out his vision to "create the best wine in the world" when he became Cellar Master at the sacred Abbey of Hautvillers in 1668. Over 40 years of dedication to this mission led to him being seen by many as the 'father of champagne', due to his visionary spirit and exceptional daring approach to the wine making process - in which he effectively laid down the fundamental rules in the methode champenoise. A favored wine of the Sun King Louis XIV, Dom Perignon himself compared his wine to "drinking stars".

Dom Perignon is made through an assemblage of Pinot Noir and Chardonnay, created by using only the best grapes harvested from the 17 Grands Crus in Champagne and the Premier Cru of Hautvillers. One of the principle hallmarks of this House is its absolute commitment in only releasing in a vintage year. This commitment to vintage only requires Dom Perignon to reinvent itself every year, staying true to the daring and creative principles laid down by the Dom Pierre Pérignon himself. Today, this vision is led by Richard Geoffroy, Dom Pérignon’s Chef de Cave.

The flagship of the House – the Vintage Blanc – is a perfect example of the intricacy of Dom Perignon, expressing the perfect harmony and savoir-faire of the wine making process, while the other key pillars; Vintage Rose and P2 Blanc both bring their own different and exciting elements to be explored.

With a cool climate suitable for more than just icewine production, Canada is also home to excellent dry still and sparkling wines. Most viticulture is based in Ontario on the east coast and British Columbia on the west coast. Because of the high risk of winter freeze and spring frost, plantings are typically centered on large bodies of water to take advantage of their temperature moderating effects.

In Ontario, particularly on the Niagara Peninsula, aromatic white varieties like Riesling and Gewürztraminer are most successful, often with racy acidity and citrus notes. Many wineries produce both dry and semi-dry versions. Chardonnay, Pinot Noir, Gamay, and Cabernet Franc perform nicely here as well. For icewine, French-American hybrid variety Vidal is popular. In British Columbia, many of the same grapes are grown, but there is also a significant emphasis on Bordeaux varieties—especially Merlot.
