Winemaker Notes

This limited edition is the ultimate expression of the fruitful collaboration between David Lynch and Dom Perignon. This does not come as a surprise, since the world of Dom Perignon and the one of David Lynch have many points in common: mystery, intensity, commitment, time, constant reinvention of the self, and above all, absolute trust in the power of creation.

Dom Perignon Rose Vintage 2000 has matured in the cellars of Epernay for eight years, allowing it to express this full richness and depth. Its rareness and bold character make it a stunning wine.On the eyes, intense, deep color, with light hints of amber and copper. On the nose the first floral notes immediately give way to black cherry and candied fruit peel followed by cocoa, cardamom and smoky aromas. On the palate the wine is beautifully structured and well-balanced in a perfect classic style, the different facets of its personality blended into a coherent whole. The fruit flavors are smooth, with surprising body and sparkle. The initial firmness becomes more rounded and creamier with a subtle sweet and sour note of pink grapefruit.

Robert Parker's Wine Advocate
The 2000 Dom Perignon Rose is a flashy, ripe Champagne that screams Pinot to a degree I have never encountered in another vintage of this wine. A dark, intense color leads to a Chambolle-like nose followed by endless red berries, flowers and spices, all backed up with plenty of muscle, richness and density. The wine continues to blossom on the palate, with utterly beguiling detail, clarity and polish, all qualities that resonate on the rich, expansive finish. The 2000 Dom Perignon Rose is 45% Chardonnay and 55% Pinot Noir, of which 25% is still Pinot. Geoffroy says his goal was to make a statement with the 2000 Dom Perignon Rose; he has done that?and so much more. In fact, the 2000 seems to signal a stylistic shift towards a more important, serious style of rose. This superb wine is not to be missed, but readers should note this is no easygoing rose, rather it is a Champagne that demands serious attention. The 2000 will test the limits of what readers expect from a Dom Perignon Rose, but the wine is simply marvelous. I loved it. This bottle was disgorged in 2008. Anticipated maturity: 2010-2025.

Austere at first, this blossoms into the comfortable, lush textures of the vintage, opening like a rose toward the power of a red wine with grip and touches of tannin. Its formidable structure gives a sense of pale limestone glazed with sunny red fruit. The finish is refreshing, substantial enough to decant for roast squab.

A beautifully balanced wine, with bitter cherries in a core of dry toast. It is already mature, its freshness transformed into a rich texture. Like many rosé Champagnes, this is made for food.

Dom Perignon
Dom Pierre Perignon set out his vision to "create the best wine in the world" when he became Cellar Master at the sacred Abbey of Hautvillers in 1668. Over 40 years of dedication to this mission led to him being seen by many as the 'father of champagne', due to his visionary spirit and exceptional daring approach to the wine making process - in which he effectively laid down the fundamental rules in the methode champenoise. A favored wine of the Sun King Louis XIV, Dom Perignon himself compared his wine to "drinking stars".

Dom Perignon is made through an assemblage of Pinot Noir and Chardonnay, created by using only the best grapes harvested from the 17 Grands Crus in Champagne and the Premier Cru of Hautvillers. One of the principle hallmarks of this House is its absolute commitment in only releasing in a vintage year. This commitment to vintage only requires Dom Perignon to reinvent itself every year, staying true to the daring and creative principles laid down by the Dom Pierre Pérignon himself. Today, this vision is led by Richard Geoffroy, Dom Pérignon’s Chef de Cave.

The flagship of the House – the Vintage Blanc – is a perfect example of the intricacy of Dom Perignon, expressing the perfect harmony and savoir-faire of the wine making process, while the other key pillars; Vintage Rose and P2 Blanc both bring their own different and exciting elements to be explored.

Napa Valley

Cabernet Sauvignon

View all wine

The Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without thinking of the other. Although Cabernet has many important outposts throughout the wine world, nowhere else has it achieved such success (and, at the highest end, commanded such lofty prices) than in Napa. Here, it is responsible for bold, opulent, and dark-fruited wines with grippy tannins and a healthy dose of alcohol. The best examples can age for decades. Each of Napa’s smaller sub-AVAs imparts a different character to Cabernet, such as Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
