    Winemaker Notes

"2005 Montrachet: (made from purchased must sourced from Domaine Thénard, whose vines are on the Chassagne side of the appellation – aged in 67% new oak). In contrast to the expressive noses of the 3 prior grands crus, this is positively discreet and almost reticent by comparison and only vigorous swirling would coax the broad-scaled nose to reveal itself, offering up notes of anise, peach, pear, citrus, orange blossom and honey that also merges seamlessly into textured, sweet, powerful and robust full-bodied flavors that possess a seductive mouth feel yet excellent precision and cut as well. This is a big wine and not overly refined but the sheer depth of material is almost hard to believe and as such, this will eventually transform into something very, very special. Patience required however. 96/2013+"
    -Burghound 96/100

"Deep aromas of menthol, rocks, white truffle and iodine. Superrich and mouthfilling; as tactile as a solid, and like a red wine in texture. This begins quite linear, then expands impressively on the back half, and finishes with superb building length, texture and grip. Uncompromisingly dry Montrachet with a near-perfect balance between its strong material and fresh acidity."

The history of this domaine dates to the beginning of the 20th century, when Etienne Sauzet inherited and bought several plots of vines in the village of Puligny-Montrachet. The vines passed through the family to Jeanine Boillot, Sauzet’s granddaughter. Jeanine and her husband, Gérard Boudot, managed the domaine, making many modernizations including improved vinification techniques and biodynamic farming. Today the domaine has been passed to their daughter Emilie and her husband, Benoît Riffault, who continue to produce white wines that are among the most sought-after in all of Burgundy. Although the winemaking techniques have been modernized, M. Sauzet’s traditions of estate-bottling and of aging the wines on their lees for 10-12 months to “nourish them” are still respected and result in superbly finished, fruity, and full-bodied wines. After four generations, Sauzet is still synonymous with high-quality, elegant, Burgundian Chardonnay.

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.

A legendary wine region setting the benchmark for Pinot Noir and Chardonnay worldwide, Burgundy is a perennial favorite of many wine lovers. While the concept of ‘terroir’ reigns supreme here—soil type, elevation and angle of each slope—this is a region firmly rooted in tradition. Because of the Napoleonic Code requiring equal distribution of property and land among all heirs, vineyard ownership in Burgundy is extremely fragmented, with some growers responsible for just one or two rows of vines. This system has led to the predominance of the "negociant"—a merchant who purchases fruit from many different growers to vinify and bottle together.

Burgundy’s cool, continental climate and Jurassic limestone soils are perfect for the production of elegant, savory and mineral-driven Chardonnay and Pinot Noir with plenty of acidity. Vintage variation is of particular importance for Burgundy wine, as weather conditions can be variable and unpredictable. In some years spring frost and hail must be overcome.

The Côte d’Or, a long and narrow escarpment, forms the heart of the region, split into the Côte de Nuits to the north and the Côte de Beaune to the south. The former is home to many of the world’s finest Pinot Noir wines, while Chardonnay plays a much more prominent role in the latter, though outstanding red and white Burgundy wines are produced throughout. Other key appellations include the Côte Chalonnaise, home to great value Pinot Noir and sparkling Crémant de Bourgogne. The Mâconnais produces soft and round, value-driven Chardonnay while Chablis, the northernmost region of Burgundy, is a paradise for any lover of bright, acid-driven and often age-worthy versions of the grape.
