Winemaker Notes

A beautiful, deeply textured Bordeaux style blend from the renowned Stags Leap District of Napa Valley. This wine has aromas of cherry and cocoa with subtle hints of violets, vanilla, and caramel. On the palate it is lushly textured with silky tannins and a round mid-palate, followed by a long delicate finish.

RP 91
Robert Parker's Wine Advocate
A blend of 77% Merlot, 13% Cabernet Sauvignon, 6% Cabernet Franc and 4% Petit Verdot, the 2015 Elevage reveals a deep garnet-purple color with an earthy/spicy nose along with dried herbs and notions of stewed plums and forest floor. Medium to full-bodied, with chewy tannins and soft-spoken fruit, it finishes earthy.
WE 90
Wine Enthusiast
This is a blend of 77% Merlot, 13% Cabernet Sauvignon, 6% Cabernet Franc and 4% Petit Verdot from the producer's estate in the heart of the appellation. It is driven by a velvety texture, with plush wrap-around tannins running the show. Oak, sage and cedar define the flavors alongside layers of plum and red currant.

Situated on the famed Silverado Trail in Napa Valley's renowned Stags Leap District, Chimney Rock is recognized as one of the world's premier fine wine producers. Chimney Rock was established in 1980 with the goal of creating wines that would compete against the best Bordeaux. The estate's location in the Stags Leap District, Napa Valley's smallest and most acclaimed sub-appellation, allows winemaker, Elizabeth Vianna to capture this unique terroir and create wines that rival the most important wines of the world. Chimney Rock is a Terlato Family winery and embodies the family's dedication to producing wines of exceptional quality.

Legend has it that quick and nimble stags would escape the indigenous hunters of southern Napa Valley through the landmark palisades that sit just northeast of the current city of Napa. As a result, the area was given the name, Stags Leap. While its grape-growing history dates back to the mid-1800s, winemaking didn’t really take off until the mid-1970s after a small but pivotal blind tasting called the Judgement of Paris.

When a 1973 Stag’s Leap Wine Cellars Cabernet Sauvignon won first place against its high-profile Bordeaux contenders, like Chateau Mouton Rothschild and Chateau Haut-Brion, international attention to the Stags Leap District of Napa Valley escalated rapidly.

The vineyards in this one-of-a-kind wine growing region receive hot afternoon air reflecting off of its eastern palisade formation. In combination with the cool evening breezes from the San Pablo Bay just south, this becomes an optimal environment for grape growing. While many varieties could thrive here, Cabernet Sauvignon and Merlot dominate with virtually no others, save for a spot or two of Syrah.

Stags Leap soils—eroded volcanic and old river sediments—encourage well established root systems and result in complex, terroir-driven wines. Stags Leap District reds have a distinct sour cherry and black berry character with baking spice and dried earth aromas, and supple tannins.

One of the world’s most classic and popular styles of red wine, Bordeaux-inspired blends have spread from their homeland in France to nearly every corner of the New World, especially in California, Washington and Australia. Typically based on either Cabernet Sauvignon or Merlot and supported by Cabernet Franc, Malbec and Petit Verdot, these are sometimes referred to in the US as “Meritage” blends. In Bordeaux itself, Cabernet Sauvignon dominates in wines from the Left Bank of the Gironde River, while the Right Bank focuses on Merlot. Often, blends from outside the region are classified as being inspired by one or the other.

Tasting Notes for Bordeaux Blends

Bordeaux Blends are dry, red wines and generally have aromas and flavors of black currant, black cherry plum, graphite, cedar and violet. Cabernet-based, Left-Bank-styled wines are typically more tannic and structured, while Merlot-based wines, modeled after the Right Bank, are softer and suppler. Cabernet Franc can add herbal notes, while Malbec and Petit Verdot contribute color and structure.

Perfect Food Pairings for Bordeaux Blends

Since Bordeaux red blends are often quite structured and tannic, they pair best with hearty, flavorful and fatty meat dishes. Any type of steak makes for a classic pairing. Equally welcome with these wines would be beef brisket, pot roast, braised lamb or smoked duck.

Sommelier Secrets for Bordeaux Blends

While the region of Bordeaux is limited to a select few approved grape varieties in specified percentages, the New World is free to experiment. Bordeaux blends in California may include equal amounts of Cabernet Franc and Malbec, for example. Occassionally a winemaker might add a small percentage of a non-Bordeaux variety, such as Syrah or Petite Sirah for a desired result.
