Canoe Ridge Cabernet Sauvignon 1998
I recommend enjoying the 1998 Cabernet Sauvignon with just about anything but bok choy. Risotto with chanterelles, ox tail stew or lightly smoked pork tenderloin would be great. I promised the buffalo I saw while vineyard sampling this harvest that I wouldn't recommend buffalo. However, I am thinking beefalo would be a nice complement, and if you must, buffalo mozzarella would add to any meal.

The winery uses traditional French cellar practices, such as small-lot fermentation, gentle handling and French oak barrels, to enhance the fruit. To allow the best expression of each lot, the winemaker tailors the yeast strains, barrel selection and fermentation practices to complement the many different dimensions of the fruit.
