Winemaker Notes

This Paso Robles Cabernet Sauvignon is deep, purple-ruby in color with aromas of black plum, cherry, and earthy notes. A juicy entry on the mouth delivers plush and fine tannins with great opulence and velvety texture. Densely layered flavors of boysenberry, cassis, and plum meet rustic, savory herbs, anise, graphite, and a touch of cocoa powder on the persistent midpalate. A finale of round tannins frame a balanced, lingering finish.

It plays nicely with California grass fed beef burgers, balsamic lamb lollipops orgrilled beef short ribs.

In the relentless pursuit of wines with balance, elegance, and purity, they have developed relationships with some of the most storied vineyards in Sonoma County and beyond to craft Banshee. The main focus for Pinot Noir is on the cool, rugged, coastal areas of the far Western Sonoma Coast, Russian River Valley, Anderson Valley and Sonoma Mountain. Each vineyard has a unique combination of a specific influence, soil type, elevation, age and exposure but the common thread is that it allows the pursuit of Pinot that achieves power without weight. They allow the grapes to express a certain transparency. They highlight a wide range of flavors other than just fruit. Banshee Wines started in 2009 at a bar in the Dogpatch neighborhood of San Francisco. With money borrowed from their friends and family, Banshee Wines was launched with eight barrels of coveted Sonoma Coast Pinot Noir. The Banshee belief is that the best wines from California are yet to be made...and they plan on producing some of them. They strive to makes wines with the complexity and deliciousness of those found at the very top of the quality and price scale, but at a price that is affordable for everyone and not just the uber-wealthy. The Banshee Tasting Room opened in August of 2013 in downtown Healdsburg, a refreshing and relaxed take on your typical tasting room. It’s more like hanging out at their house and sharing some wine with family, rather than bellying up to an ever-crowed tasting bar. Today the Banshee Wines mission remains the same as it was in those early days – to craft distinctive wines that over-deliver in every possible way.

As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
