Somm Note

Winemaker Notes

Dark, red brick in color. Fantastic aromas such as vibrant cassis, ripe black fruits, and finely toasted sandalwood fill the glass backed by dark chocolate, roasted coffee, and some classic iodine notes. The mouth-feel is rich and fills up the whole pallet. There is great concentration and loads of soft velvety tannins. Beautifully balanced by great minerality and lush ripe fruit, the wine has a long finish with wonderful intensity, playfulness, elegant spice and a lovely earthiness that provides great texture and structure. This is a classic style big Cabernet Franc from a great vintage - a perfect companion to food.

Serve slightly below room temperature. Pair this special wine with big flavors, such as lamb, steak, aged cheeses and good quality chocolate with a high percentage of cacao. Or enjoy it on its own...with no distractions.

Blend: 87% Cabernet Franc, 13% Merlot

An ambitious cabernet franc with plenty of fine oak, but also generous cassis and black cherries. The bold tannins aren’t too much, because they are married to nice freshness and lighten up at the rather subtle finish. Drink or hold.

The 2015 Cabernet Franc Caya was mostly sourced from the winery's own 1991 plantings and Surrey Vineyard, with 13% Merlot from McCullough Vineyard, all aged for 20 months in 30% new French barriques. It comes in at 13.5% alcohol. This is not a deep, fleshy wine, but it is a perfect food wine that is still chock-full of juicy fruit and flavor. Elegant and fresh, it has a bright, lifted feel, plus those predictable traces of herbs and olives on the finish. They nuance the fruit, but that's not all there is. This often seems more concentrated in fruit flavor than you might infer from the wine's elegance and freshness. The tannins are very ripe, but there is some gentle grip on the finish. It should age reasonably well, too, but you can drink this right now.

The estate spans approximately 170 acres including the acclaimed 55 acre sustainably farmed vineyard located in Sagaponack, NY. They also own 28 acres on the North Fork of Long Island, 200 acres in Mendoza, Argentina and 2.5 acres in Mallorca, Spain. Finally, they partner with carefully selected growers on 338 acres on the North Fork of Long Island as well as 1,750 acres in Côtes de Provence, France.

The unique combination of Bridgehampton loam soil and breezes from the Atlantic Ocean, located 2.6 miles from the estate, provide maritime conditions perfect for achieving the balance of ripeness and acidity that has come to define Wölffer’s signature style: food friendly, elegant and built for longevity. Their dry ciders and gin have extended Wölffer quality into new categories, exemplifying their drive for innovation and excellence.

Cabernet Franc, a proud parent of Cabernet Sauvignon, is the subtler and more delicate of the Cabernets. Today Cabernet Franc produces outstanding single varietal wines across the wine-producing world. Somm Secret—One of California's best-kept secrets is the Happy Canyon appellation of Santa Barbara. Here Cabernet Franc shines as a single varietal wine or in blends, expressing sumptuous fruit, savory aromas and polished tannins.
