    Fashioned from the same sources, the 2007 Cabernet Sauvignon is somewhat closed, but it reveals impressive component parts, including a dense purple color, lots of concentration, full-bodied power, plenty of tannin and a sweetness and equilibrium that augur well for further development. Atypically backward for a 2007, it needs 3-4 years of cellaring and should drink well for 15+ years. Rating: 91+

Winter was started in 2004 with the mission of producing handcrafted wine of uncompromising quality and distinction.

Mike Hirby’s career in wine began as a sommelier in Colorado, Springs, CO, at the award-winning restaurant Primitivo. He was Assistant Winemaker at Behrens & Hitchcock Winery from 2000-2002 and left to make wine for Relic and other Napa Valley wineries including Realm Cellars, Rockledge Vineyards, and Sherwin Family Vineyards. Known as one of the Napa Valley winemaking "young guns," Mike Hirby became the principal winemaker for Winter in 2008.

Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
