Winemaker Notes

Enclave is deep, dark red in colour. The nose reveals red fruit such as plums and cherries, a touch of cassis, white pepper, damp earth and a hint of black fruit. It has an intriguing aromatic complexity. Elegant and well-structured on the palate with firm, yet silky tannins. Persistent in the finish. This blend has layers of flavours. The firm tannins of Cabernet Sauvignon and Petit Verdot intermingle with the softness and complexity of Carménère and the elegance of Cabernet Franc. Its blend means that Enclave can be cellared for 10 to 15 years.

    From Pirque, one of the highest areas in the Maipo Valley, this wine shows all the best qualities of Andean cabernet with a crystal-clear transparency. It’s soft and gentle, the acidity and tannins weaving a fine structural network to carry the earthy, eucalyptus-scented fruit. It’s a classic example that captures the freshness of the Andean snow-capped peaks even in a warm vintage like 2012.

    Earthy aromas include herbal notes, a hint of tomato sauce, asphalt and dusty berry fruits. This has a raw tannic exterior but is softer in the middle. Flavors of saucy, herbal plum and blackberry come with notes of tobacco and olive, while this is drawing and gritty on the finish, with a roasted quality. Drink through 2024.

    The 2012 Enclave Cabernet Sauvignon is Ventisquero's top of the range, a blend with a pinch of Carménère (5%), Petit Verdot (3%) and Cabernet Franc (2%) from two vineyards in Pirque in the Alto Maipo; situated at some 9000 meters altitude, this is a fresher zone in Maipo, which compensated the heat of the vintage. It had a classical vinification with a post fermentation maceration of three to five weeks with malolactic in barrel and an élevage of 18 months. The nose is classical and quite complex for such an early age, with aromas of tobacco, earth, cigar box and blackberries. The tannic structure is quite large and the telltale Cabernet tannins are there, with a dusty texture, a little rustic with good freshness. Powerful red for powerful food that would welcome some time in bottle.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

The Maipo Valley is Chile’s most famous wine region. Set in the country’s Central Valley, it is warm and quite dry, often necessitating the use of irrigation. Alluvial soils predominate but are supplemented with loam and clay.

The climate in Maipo is best-suited for ripe, full-bodied reds like Cabernet Sauvignon (the region’s most widely planted grape), Merlot, Syrah and Carmenère, a Bordeaux variety that has found a successful home in Chile.

White wines are also produced with great prosperity, especially near the cooler coast, include Chardonnay and Sauvignon Blanc.
