Somm Note

Winemaker Notes

The color is pink salmon. The effervescence is long-lasting and leaves to a delicate mousse. This wine is rich and elegant. On the nose, it develops intense red-fruits aromas (strawberries and wild raspberries). This wine is full in body and well-balanced, very pure and full of interesting nuances.

A carnelian-hued rosé that's rich and expressive, with a well-spiced range of ripe raspberry, yellow peach, elderflower, red licorice and blood orange sorbet set on a fine, chalky mousse. Showing good concentration without weight, this is a vibrant, well-tailored example. Pinot Noir and Chardonnay.

  • 92

Generous and expressive, the latest rendition of Vilmart's NV Brut Premier Cru Cuvée Rubis is showing very well, bursting with aromas of red berries, plums, blood orange and dried flowers. Medium to full-bodied, fleshy and enveloping, with a sapid core of fruit, a pillowy mousse and a lively, delicately phenolic finish, it's already drinking well. This is based on the 2017 vintage, with reserve wines from the 2016 and 2015 vintages, and it was disgorged with nine grams per liter dosage.

  • 90

The NV Cuvée Rubis is vibrant pink, with aromas of wildflowers, wild raspberry, and juicy fruit. The palate is juicy and round, with blood orange, and perfect for relatively near-term drinking over the next 6-8 years.

Vilmart & Cie, France
Vilmart & Cie. traces its history back to 1890, when it was founded by Désiré Vilmart, and from the beginning, Vilmart & Cie. has always been a récoltant-manipulant, making champagne exclusively from estate-owned vines. Since 1989 the estate has been in the hands of Laurent Champs, the fifth generation of the family to take the helm of the house.

The majority of Vilmart's 11 hectares of vines lie in Rilly-la-Montagne, although there are a few plots just over the border in the neighboring village of Villers-Allerand. Vilmart is a member of Ampelos, an organization that promotes organic and sustainable viticulture, and Champs has never used any herbicides or chemical fertilizers since taking over the estate. All of the vineyards are planted with cover crops and plowed, and Champs enjoys an additional advantage in that his parcels are relatively large—only 12 different parcels over 11 hectares—meaning that he is more protected from contamination by chemical treatments in neighboring plots.
