Candied blackberry aromas meet with cola spice, licorice and wet earth on the nose of this red blend from the same team behind the Jonata and The Hilt wineries. There is a strong structure to the full-bodied palate, where black fruit plays with cocoa and pepper spices.

The 2015 Red Wine is the Bordeaux blend of the estate and is 50% Cabernet Sauvignon, 20% Cabernet Franc, and the balance Merlot and Petit Verdot, all from declassified Jonata lots. Its deep, inky purple color is followed by a rich, powerful wine that's loaded with notions of blackcurrants, unsmoked tobacco, graphite, and crushed rocks. With background oak, full body, ripe yet present tannins, and a great finish, it's going to keep for at least 7-8 years.

The vineyard and winemaking team behind Jonata & The Hilt Estate present The Paring; a focused collection of wines with a goal to craft an honest and delicious bottle of wine for every occasion and table.
o In kitchens around the world, the Paring knife has become a chef’s staple for its versatility. The Paring wines were created with this same intent. Full of vibrance, complexity, and versatility, the wines are a perfect compliment to every occasion.
o The Paring Wines are sourced primarily from our estate vineyards in Ballard Canyon & Santa Rita Hills and trusted vineyards in Northern California to produce wines that are a true expression of classic California style. Blocks from the select vineyards are designated for The Paring ahead of harvest and made with the same intention and care that goes into the wines of Jonata & The Hilt Estate.
California is a winemaking colossus; by itself it is the fourth largest producer in the world. Red wine accounts for 56% of the total by volume, and red grapes 63% of total acres planted. In addition, a number of California red wines are heralded as being among the most prestigious and sought-after wines in the world.
While the state’s incredibly diverse geography, soils and microclimates allow for a wide array of styles, the key factor unifying California red wine is the abundance of sunshine and a long, consistent growing season. This leads to well-developed fruit marked both by impressive ripeness and balancing acidity.
The state’s most famous red wine region, of course, is Napa Valley, where Cabernet Sauvignon reigns as king. But California boasts a wealth of other impressive appellations. The much larger and climatically varied Sonoma County also produces world class California Cabernet, along with wonderful examples of California Pinot Noir and Zinfandel.
Fine versions of Cabernet and Zinfandel hail from Paso Robles as well, which is also gaining fame with Rhone varietals like Syrah and Grenache. As for Pinot Noir, terrific examples can be found from AVA’s such as Anderson Valley, Carneros, Santa Lucia Highlands and Sta. Rita Hills. Wineries in Santa Barbara and San Luis Obispo Counties are making wonderful Syrahs, and the Sierra Foothill appellations are proving to be an experimental hotbed, with Italian and Spanish varietals employed to great effect.
This of course is a mere sketch. The subject of California red wine is as deep and broad as an ocean, and absolutely a joy to explore!
