    Vincent Carême has earned a place on our Top 100 Wineries of the Year for the last two years, based on the wines he makes at his family’s estate in Vouvray. His wife is from South Africa, and together they started this project in Swartland, working with 40-year-old dry-farmed bush vines growing on decomposed granite. He ferments the wine without added yeasts and ages it in a combination of stainless steel and 500-liter French oak barrels (half of them new). This is an exciting wine, not only for the freshness of its chenin expression—bathed in scents of chamomile flowers, tart orange, lemongrass and herbs—but also for its price, which is astonishing considering how much depth of flavor the wine has on offer. Grape-skin tannins add to the richness of the texture, while brisk acidity keeps it tight, focusing its juicy flavors to match fresh goat cheese.

Unquestionably one of the most diverse grape varieties, Chenin Blanc can do it all. It shines in every style from bone dry to unctuously sweet, oaked or unoaked, still or sparkling and even as the base for fortified wines and spirits. Perhaps Chenin Blanc’s greatest asset is its ever-present acidity, maintained even under warm growing conditions. Somm Secret—Landing in South Africa in the mid 1800s, today the country has double the acreage of Chenin Blanc planted compared to France. There is also a new wave of dedicated producers committed to restoring old Chenin vines.

Literally meaning "the black land," Swartland takes its name from the endangered, indigenous "renosterbos" (translating to rhino bush), which used to be plentiful enough to turn the entire landscape a dark color certain during times of year.
