    This delicious wine is aged in a combination of stainless steel and Acacia wood, which allows for barrel ageing without the impact of oak overwhelming the delicate Sauvignon Blanc grape. The nose is dominated by citrus aromas of Meyer lemon and key lime pie, with a strong mineral component and subtle notes of white peach, fresh mango and fresh tarragon. The mouth presents creaminess up front, due to the stirring of the lees. This evolves into minerality, with flavors of lemon rind, white flowers and delicate balsa wood. The finish delivers more key lime pie.

    Vintner Barry Waitte founded Tamber Bey Vineyards in 1999, when he purchased a 60-acre vineyard in the Yountville Appellation and an 11-acre property in the renowned Oakville Appellation. This marked Waitte’s entry into the wine business as a grower. He immediately hired vineyard manager Josh Clark to plant and farm the properties with the goal of growing premium Cabernet Sauvignon, Merlot and Dijon Chardonnay.

    A visit to the Tamber Bey winery is like nothing else in Napa Valley. The winery is located at the Sundance Ranch in Calistoga, a world-class, 22-acre equestrian facility that is dedicated to training top performance horses. The winery was built in 2013 by remodeling a 15,000-square-foot covered riding arena into a state-of-the-art winemaking facility with a crush pad that houses 36 fermentation tanks sized for individual vineyard-designated wines.

    Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
