Winemaker Notes
This Cabernet Sauvignon presents with deep, dark reds and purples. Aromas are opulent with ripe black plum, currant, blackberry, anise, espresso and toasted oak, as well as a subtle thread of crème brûlée. A rich, dense profile follows with flavors of cassis and plum, ripe black fruits, espresso, mocha and molasses, with a fine French oak influence. This is a deep, structured wine with excellent fine-grained tannins.

COMMENTARY: The 2015 St. Supéry Dollarhide Estate Vineyard Cabernet Sauvignon shows excellent depth and style. TASTING NOTES: This wine stays long and lustful on the palate with aromas and flavors of black fruit, pencil lead, and licorice. Pair it with a juicy, grilled T-Bone. Deep garnet-purple in color, the 2015 Cabernet Sauvignon Dollarhide Estate Vineyard opens with crushed black currant and red plum notes with underlying notes of tree bark, bay leaves, black olives and cracked pepper. The medium-bodied palate is finely crafted and refreshing in the mouth, with the grainy tannins complementing the youthful fruit, finishing with an herbal lift. This was tasted as a barrel sample.

The winery in Rutherford is home to winemaking, visitor facilities, and 35 acres planted to Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. All the estate acreage owned by St. Supéry is farmed sustainably using minimal intervention and cultivation. One of the most prestigious wines of the world capable of great power and grace, Napa Valley Cabernet is a leading force in the world of fine, famous, collectible red wine. Today the Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without the other. But it wasn’t until the 1970s that this marriage came to light; sudden international recognition rained upon Napa with the victory of the Stag’s Leap Wine Cellars 1973 Cabernet Sauvignon in the 1976 Judgement of Paris.
Cabernet Sauvignon undoubtedly dominates Napa Valley today, covering half of the land under vine, commanding the highest prices per ton and earning the most critical acclaim. Cabernet Sauvignon’s structure, acidity, capacity to thrive in multiple environs and ability to express nuances of vintage make it perfect for Napa Valley where incredible soil and geographical diversity are found and the climate is perfect for grape growing. Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
