Somm Note

Winemaker Notes

Vibrant straw, green-gold hints. Aromas of true complexity: citrus and orchard fruit, lemon, greengage, pear, peach and honey all mineral wrapped with a subtle oak. Linear yet rich. Classic and elegant.

Professional Ratings

The touch of spice in this wine adds richness to its white fruits. It gives a wine that is both ripe and textured, with lively acidity at the end. This will be a fine wine from 2021.

  • 93

This domaine’s 1.6-acre Aux Bouthières parcel is deep clay without calcareous rock, planted to vines 55 years old. In a lineup of PouillyFuissé, it stands apart, the terroir speaking in the complexity of the wine. The flavors are bold and completely clean, and though the entire lot aged for a year in oak barrels (30 percent new), the wood influence comes through in cedar and foresty highlights, in richness adding to the elegance of the citrus and apple flavors. A brisk Pouilly-Fuissé suited to several years of bottle age.

  • 92

Opening in the glass with notes of ripe pears, confit citrus, nutmeg and warm bread, the 2017 Pouilly-Fuissé Aux Bouthières is medium to full-bodied, rich and textural, with an unctuous, chewy mid-palate, ripe acids and a saline, expansive finish that displays plenty of sucrosity from ripe grapes. Rating: 92+

Domaine du Roc des Boutires, France
Domaine du Roc des Boutires Rock of Solutre Emblem Winery Image
In the village of Pouilly, in the heart of Pouilly-Fuissé AOC, lies the Domaine du Roc des Boutires. It originates from two names: the proximity with Roche de Solutré, which is an emblem of the appellation and a testament to the extraordinary geologic richness of the vineyard; and its settlement in the very heart of one of the best terroirs of the appellation, ‘Aux Bouthières’. In ancient French vocabulary, a ‘boutière’ means a secondary road that mule skinners used for the transportation of oils and wines in remote parts of the country. The vineyard is actually 5 kilometers west from the ancient Roman track of Via Agrippa, on a very small road which is now leading to the village of Solutré, the hills of the Maconnais and the plains of the Charolais.

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.

The source of some of the most sought-after white wines of the Mâconnais, Pouilly-Fuissé is produced exclusively from the Chardonnay grape and tends to be slightly richer in style than wines from its northern neighbor, the Côte de Beaune—mainly due to warmer weather. Wines from Pouilly-Fuissé have some versatility; they can be enjoyed young and can also often improve with a little time in the cellar. Pouilly-Fuissé wines are considered some of the best values for white Burgundy.

Similar to the Côte de Beaune, the soils of Pouilly-Fuissé are mainly limestone and clay. The appellation includes the communes of Fuissé, Solutré (which includes Pouilly), Vergisson and Chaintré. The richest Chardonnay comes from Fuissé and Solutré-Pouilly, whereas the Chardonnay at higher elevation, from Vergisson, expresses more minerality and finesse. Pairing Pouilly-Fuissé with lobster or King Crab will bring great joy not only to your palate—but also your pocketbook!
