Classic Oppenlander aromatics of dark fruit, blackberry,blueberry, cranberry as well as the typical earthy, leathery, andclove character this vineyard is known to exude. The flavors of coffee, dark chocolate, cranberry and blackberry mingle on the tongue while the wine finishes nice and savory.

    A brilliant red color and enticing spicy oak aromas first beg for attention, and then great spice and fruit flavors and a vivid texture take over. Nutmeg, clove, black cherry and a hint of black tea fill out the flavor spectrum. This wine has firm tannins, lively acidity and a sense of elegance with depth that is compelling.

Phillips Hill Winery is located on Greenwood Ridge, west of Anderson Valley in the Mendocino Ridge appellation. Founder and Winemaker, Toby Hill established Phillips Hill Winery in 2002. A former visual artist, Toby translates his intense study and practice of composition into the delicate balance of making wine. His 1997 purchase of 30 acres just 10 miles from the Pacific Ocean put him in the heart of Anderson Valley’s premium Pinot Noir country, where the availability of grapes from exceptional local vineyards influenced him to focus primarily on the cool climate variety. Pilgrimages to Burgundy, France, have also shaped Toby’s pursuit of a refinement and elegance in style. Here he established collaborative relationships with Burgundian winemakers. Using old world winemaking practices from new world vineyards, he aspires towards terroir driven wines. Using native yeast, less intervention, and believing less is more, Toby’s intent is for each wine to be a genuine expression of the land.

Thin-skinned, finicky and temperamental, Pinot Noir is also one of the most rewarding grapes to grow and remains a labor of love for some of the greatest vignerons in Burgundy. Fairly adaptable but highly reflective of the environment in which it is grown, Pinot Noir prefers a cool climate and requires low yields to achieve high quality. Outside of France, outstanding examples come from in Oregon, California and throughout specific locations in wine-producing world. Somm Secret—André Tchelistcheff, California’s most influential post-Prohibition winemaker decidedly stayed away from the grape, claiming “God made Cabernet. The Devil made Pinot Noir.”
