A Bordeaux blend of 77% Cabernet Sauvignon, 13% Cabernet Franc, 8% Merlot and 2% Petit Verdot.

Almost black in color with a deep red edge, 2006 Les Pavots reveals a profound bouquet of black cherry, licorice, black currant, blueberrypie, and blackberry, combined with chocolate, vanilla, coffee, black tea, subtle spice notes of cloves and cinnamon and its distinctive touch of "garrigue." Very full-bodied, concentrated yet graceful, the wine confirms the same rich, ripe fruit impressions on the palate with spice and black truffle. The mouth feel is massive and round with silky tannins and hints of mocha leading to a very long finish. Will benefit from three years of cellaring and age gracefully for two decades or more.

    The 2006 Les Pavots (a 2,730-case blend of 77% Cabernet Sauvignon, 13% Cabernet Franc, and the rest Merlot and Petit Verdot) exhibits big notes of chocolate fudge intermixed with dark berry fruit, forest floor, underbrush, and some smoky oak. The wine is full-bodied, with remarkable intensity, low acidity, and a fleshy, opulent mouthfeel. This wine should drink well for 15-20+ years.

    Supple and harmonious, with layers of ripe plum, currant, black licorice, cedar and cigar box that are evenly distributed. Rich and full-bodied without being heavy, this retains its focus and elegance, ending with a long, graceful finish and an espresso bean note. Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. Best from 2010 through 2016.

In 1982 Sir Peter and Lady Margaret Michael built the Peter Michael Winery on a square mile of rocky volcanic ridges that form the western face of Mount St. Helena in Knights Valley, Sonoma County, California. The estate vineyards rest on steep hillsides ranging in elevation from 1100 to nearly 2000 feet. Of the nearly 600 estate acres, only about 20% are planted to grapes. Peter Michael Winery is best known for single-vineyard and estate grown Sauvignon Blanc, Chardonnay, Pinot Noir and a Cabernet Sauvignon cuvee of Cabernet Sauvignon, Merlot and Cabernet Franc. The Peter Michael Winery remains true to its commitment to growing classic grape varieties in small mountain vineyards in order to produce great wines using classical winemaking techniques. Given this covenant to the product, only a limited quantity will ever be available.
