    Sadly, production is limited for these impressive Syrahs fashioned by Paul Lato, a Polish immigrant working out of the Santa Maria coop, who is making quite a name for himself with both Syrah and Pinot Noir. The spectacular 2005 Syrah Larner Vineyard Cinematique is cropped at two tons of fruit per acre, and co-fermented with a tiny amount of Viognier (7%), this 100% destemmed wine exhibits a dense ruby/purple color as well as stunning aromatics of acacia flowers, creme de cassis, blueberries, graphite, and spice. With fabulous texture, a seamless integration of acidity, tannin, alcohol, and wood, beautiful opulence, and a long, 40 second finish, this stunning Syrah evidences the brilliance of this young cellar rat, an up-and-coming star in California’s Central Coast.

Paul Lato is a former sommelier who studied wine extensively and traveled the world before starting his winemaking operation on the Central Coast in 2002. Though their style is inspired by the balance and harmony, they also seek to capture the intensity of flavor that is a hallmark of sun-kissed California vineyards.

Through small-lot boutique production, minimal intervention in the winery, and purity of intention, the team works to achieve elegance in the bottle that showcases the unique qualities of these amazing sites. The ultimate goal is to create wines that are seamless and textural with the structure and balance to complement fine cuisine.

Marked by an unmistakable deep purple hue and savory aromatics, Syrah makes an intense, powerful and often age-worthy red. Native to the Northern Rhône, Syrah achieves its maximum potential in the steep village of Hermitage and plays an important component in the Red Rhône Blends of the south, adding color and structure to Grenache and Mourvèdre. Syrah is the most widely planted grape of Australia and is important in California and Washington. Sommelier Secret—Such a synergy these three create together, the Grenache, Syrah, Mourvedre trio often takes on the shorthand term, “GSM.”

Ranging from cool and foggy in the west to warm and dry in the east, the Santa Ynez Valley is a climatically diverse growing area. The most expansive AVA within the larger Santa Barbara County region, Santa Ynez is also home to a wide variety of soil types and geographical features. The appellation is further divided into four distinct sub-AVAs—Sta. Rita Hills, Ballard Canyon, Los Olivos District and Happy Canyon—each with its own defining characteristics.

A wide selection of grapes is planted here—more than sixty different varieties, and counting. Chardonnay and Pinot Noir dominate in the chilly west, while Zinfandel, Rhône blends, and Bordeaux blends rule the arid east. Syrah is successful at both ends of the valley, with a lean and peppery, Old-World sensibility closer to the coast and lush berry fruit further inland.
